Irish Potato Bread

Irish Potato Bread is also known as Fadge Spud, Tatty or Purdy Bread.

Nothing goes better with a nice fry than a few golden slices of potato bread, and it’s so simple to make from home. All you need is some mashed potato and some flour. If you have never tried this with your usual fry then you are seriously missing out.

You will need:
• Boiled potatoes mashed and seasoned with salt and pepper
• Flour
• Cooking oil

How to make it:
• Mix one part flour with two parts potato
• Flatten the mixture using a rolling pin (or glass)
• Cut into squares and fry in a hot pan of oil for a couple of minutes on each side

And that’s it! Simple and quick, a great way to use up the left over spuds from dinner . . . enjoy!  :)
