Jaffa Cookie cakes!


       Look what I whipped up in the kitchen last nite...


I needed a quick and fun treat to whip up for a picnic this weekend and came across this recipe over on Kim's Site. I twisted the recipe a little by using Jaffa Cakes instead of Oreos (which I will also try some day :P) and they are oh so divine. Can’t wait to share them out at the picnic and see what everyone thinks!

So why don’t you give it a go and put your stamp on this recipe with something different in the middle. I was even thinking of using Jammy Dodgers or Maltesers...

What you will need:


• 226g of butter
• 12 bun cases
• 2 large eggs
• 1 tsp salt
• 1 tsp baking soda
• 1 tbs vanilla extract
• 165g (5.7oz) of brown sugar
• 201g (7.1oz) white sugar
• 192g (6.75oz) cups all-purpose flour
• 283.5g (10oz) semi-sweet chocolate chips
• 1 pack of Jaffa Cakes (12 should do)

Method:

1. Preheat oven to 180 degrees C (gas mark 4).
2. Mix the butter with the brown and white sugar until creamy. Add in the eggs and vanilla extract.
3. Mix together the flour, baking powder and salt and then add to the butter mixture SLOWLY.
4. When well mixed add the chocolate chips.
5. Scoop a tablespoon amount of mixture into a bun case and squish on a Jaffa cake.
6. Scoop another tablespoon amount on top of the Jaffa Cake and smooth around.
7. Put the Jaffa cookie cakes on a baking tray at least two inches apart and bake for 10-13 minutes.

When they have cooled down sit back with a cup of your favourite tea and enjoy…. Or watch your nearest and dearest’s faces when they realise the hidden surprise inside.
