Perfectly Puffed Pancakes

It's Shrove Tuesday!!! Which means we can eat lots of sugary pancakes and treats... (not that we need an excuse) :)

Shrove Tuesday is a celebration which marks the day before Ash Wednesday. Its a day to reflect and clean the soul. Pancakes are traditionally eaten on this day as a last chance to feast before the lenting period begins.


So if you would like to join in on the celebrations, heres a simple recipe on how to make perfect puffy pancakes... They never fail to go down well in this house!! :)



Ingredients:

  • 3  - Eggs
  • 120g  -  Flour
  • 1 tsp  -  Baking Powder
  • 140ml  -  Milk
  • 2tbsp  -  Caster Sugar
  • 1tsp  -  Vanilla (optional)

Method:

 Put a non stick pan on a medium heat...

1)  Seperate yolks from whites
2)  Combine milk, eggs and sugar... gradually add flour and baking powder until mixture is smooth
3)  Add salt to whites and whisk till fluffy and thick
4)  Fold into the mixture and cook straight away
5)  Cook pancakes for a few seconds on each side 


And there we have it, yummy bubbly pancakes... you now have to decide what to have with them... I had Lemon Curd and syrup mmm!!  Enjoy!
