Club Penguin Puffle Cupcakes!

I made these last year for my little cousins birthday, he is obsessed with club penguin so I thought these little Puffle Cupcakes would go down a treat.... and they sure did!! :)


Club penguin Puffles

If you know a certain someone or someones who would appreciate these cute little characters then heres how its done... all you need is:


Buns:
1 - pack of muffin mix (or cupcake mix)
125ml - Milk (or how ever much it says on the pack)
1 - Egg

Buttercream:
50g - butter
100g - icing sugar
1tsp - Vanilla extract
Food Colouring - (Red,Yellow,Blue)

Royal Icing:
1 - egg white
50g - icing sugar
1tsp - vanilla
cocoa powder

Method:
  • Whisk egg whites until fluffy and add sugar, keep whisking until a really thick consistency
  • Spoon a little into a seperate container and add Cocoa until really dark in colour, cover with cling film and set aside
  • Spoon white mixture into an icing bag (see here how to make your own icing bag from greaseproof paper) and onto a sheet of greaseproof paper draw lots of double circles touching for the eyes (I done lots of extra ones incase I messed some up).
  • Leave to dry.
  • Make up the bun mixture (as suggested on the pack) and cook.
  • Mix the butter and icing until smooth and fluffy, add vanilla
  •  Seperate into 6 different containers and add the food colouring
  • wait until buns are fully cooled then decorate with buttercream (I used a knife to decorate but if you have icing bags it mite be easier done)
  • When the royal icing eyes are dry and ready to use spoon the darkened icing into an icing bag with a tiny snip at the end to create a thin line to outline the eyes and to make the pupils.
  • Lift carefully off the paper with a knife and set on the buns

And thats it... if the eyes seem a bit difficult you could use mini marshmallows and icing pens instead.
