The perfect cookie: Biscuity on the outside, soft and chewy on the inside... sweet and moreish!
What else can a cookie be?
I was so proud to have finally succeeded in making the 'perfect' cookie this week. Usually they would come out a bit too cakey or over done... but with help from A spoonful of sugar and some proper measuring equipment... eh voila! A stack of yumminess :)
Ingredients:
- 300g - Plain Flour
- 170g - Unsalted Butter
- 215g - Light Brown Sugar
- 120g - White Sugar
- 300g - Choc Chips
- 1/2 tsp - Bicarbonate of soda
- 1 tsp - Fine salt
- 1 tbsp - Vanilla (extract)
- 1 - Large Egg
- 1 - Large Egg Yolk
- Grease Proof paper
Cookie Dough Mixture:
- In a small bowl sift the flour, bicarbonate of soda and salt and set aside
- In a bigger bowl mix together the butter, (works best if melted) white and brown sugars and vanilla
- Once blended add the large egg and yolk and beat well
- Mix in the dry mixture along with the chocolate chips and mix well
- Cover with cling film and set in the fridge for no less that 30mins
Cooking:
- Preheat oven to 190c (gas mark 5)
- Set a strip of greaseproof paper onto a baking tray and scoop on small golf ball size lumps of cookie dough, two inches apart and flatten slightly
- Cook for 10-12mins, or until golden around the edges
And thats it! This recipe should make around 18 cookies so grab a nice cup of tea or glass of milk, put your feet up and tuck in... we all need a little self-indulgence sometimes :)
